Trends in the International Meat Industry

That was the theme, when food professionals from all over Europe met in Denmark for the IMS Symposium this week

The International Meat Secretariat (IMS) is a non-profit organisation that brings together livestock producer associations, national and regional meat associations, meat exporter associations, meat processing companies, government, and corporate partners from around the world representing over 75% of the global production of cattle, pig, and sheep meat. IMS hosts symposiums to provide a platform for expert dialogue and to contribute to international research. And this year the symposium was held in Copenhagen, organized by Danish Meat Research Institute.

Global markets
Rabobank Holland highlighted, that the global animal protein market will grow by 45% within the next two decades. More specifically, that the Pork segment will grow in emerging markets China, Africa, Brazil. The beef segment should direct their initiatives towards Asia and Africa and the poultry segment should focus on Middle East, Asian and African territories.

The Asian investors are now directing investments into territories, where extensive production is possible to meet the fast growing demand for animal protein and Poland is a fast runner. To succeed, animal welfare and environmentally friendly production is a must.

Alternatively, artificial cultured meat is now at hand. Based on stem cells, the alternative has advantages and the environmental aspect is one of them, in comparison to conventional meat.

Shelf life and hygiene
To preserve better and extend shelf life, the breakthrough initiatives are still to come. Shelf life and high hygiene standards go hand in hand. Cleaning technology and techniques have not been developed in the same pace as the machinery automation in general. As a result, Danish Meat Research Institute has tested initiatives of how to clean conveyer belts during production, in order to meet 24/7 production demands.
